As the majority of the cakes I make are eaten fresh from the oven, this is enough for 2 or 3 people.

= Victoria sponge fairy cakes =
== Ingredients ==
* 2oz butter, lightly salted
* 2oz caster sugar
* 1 medium egg
* 2oz self-raising flour
* 2.5ml lemon, Ameretto, vanilla essance - what ever flavour you'd like to gently flavour the cakes

== Directions ==
# Turn on fan oven at 180&deg;C
# Cream butter and sugar in mixer with cream beater
# Add egg
# Add flour
# Add flavour

Place into fairy cases and bake in the oven for 15 minutes.  Once cooked, divide between the eaters and remove cakes.  Serve with a lovely cup of tea.
