(Note this is mixed units but this makes exactly the right amount of pastry for my flan dish!)

* 5oz plain flour
* 1.25oz lard
* 1.25oz butter
* 25ml cold water

=== Filling ===
* 15ml tablespoon olive oil
* 2 medium onions sliced thinly into half-moon slices
* 230ml whipping cream
* 2 large eggs
* 1 large egg yolk
* 2.5ml teaspoon salt
* 1ml teaspoon black pepper freshly ground
* 2 tablespoons fresh thyme chopped
* 114g fresh goat cheese crumbled

== Directions ==
# Make pastry and line an 8" flan dish. <br>If using a Kenwood Chef, put all ingredients for the pastry in the bowl.  Using the K beater, mix on speed 1 increasing up to speed 4/5.  When a ball is formed, stop mixer and place pastry in fridge to rest for at least 30 minutes.
# Finely chop onion and then caramelise for 20 minutes, stirring occasionally.
# Mix together eggs, milk, and cream using blender head.
# Line flan dish with pastry and place cheese, onions, and thyme over pricked base.
# Pour over cream mix and bake at 200C for 32 minutes.

Allow to cool before serving.
