This is used when you need a sweet shortcrust pastry but this is smoother and more flavoursome.

* 40g caster sugar
* 75g butter
* 1 egg
* 2.5ml grated lemon rind
* 1ml salt

# Mix in mixer until you have a smooth pastry
# Stand for 30 minutes - if you don't need all of it, this is the time to place half in a freezer bag and place in freezer.
